Tuesday — Chicken Tacos
Use:
Both chicken breasts from chicken #1
(If you’re only using one chicken total this week, use 1 breast.)
Stretch the Meal With
Beans
Peppers
Onions
This is a good “stretch meal” because the chicken adds flavor and protein without needing to be the entire centerpiece of the meal.
Simple Taco Filling
Dice or shred cooked chicken.
Slice peppers and onions.
Sauté onions and peppers until softened.
Add beans and chicken.
Season with:
Taco seasoning
Cumin
Chili powder
Garlic
Salt & pepper
Warm through and serve in tortillas.

Cheese
Lettuce
Salsa
Sour cream
Cilantro
Lime
